Tortilla: how to cook a fluffy Spanish omelette with potatoes

Tortilla is a traditional dish of Spanish cuisine, or, more simply, an omelette with potatoes. The unusual combination of products, at first glance, makes an unusually tasty dish. This tortilla is perfect both hot and cold as an appetizer.
Popular chef Yevhen Klopotenko shared a recipe for a Spanish tortilla on his official website.
Ingredients:
- potatoes – 500 g
- eggs – 5 pcs
- olive oil – 100 ml
- onion – 1 pc
- salt
Method of preparation:
1. Cut the potatoes into rings
2. Onion cut into cubes.
3. Heat the oil in a frying pan. Put the kartpole and fry for 10 minutes.
4. Add onion to potatoes and fry until potatoes are soft – about 20 minutes. Then use a spatula to divide the potatoes into smaller pieces.
5. Strain the potatoes and onions through a sieve to get rid of excess oil. Then put the vegetables in a bowl and season with salt.
6. Mix eggs and salt separately. Beat with a whisk.
7. Mix the egg mixture with the potatoes and leave for 5 minutes.
8. Put the resulting mass on a preheated frying pan and fry over medium heat until the eggs thicken.
9. Turn the tortilla to the other side (you can do this with a flat plate). Fry on the other side for another 3-4 minutes. Then let it stand in the pan for another 2 minutes.
