Tastier than broth: a light chicken soup for a hearty lunch
If you don't know what to cook for lunch, any soup will be the best option. If you want a more substantial one, cook it with meat, or a light one with chicken, vegetables, or fish.
Cook Anna shared a recipe on Instagram for a light, flavorful chicken soup with vegetables, herbs, and garlic.
Ingredients:
- water - 1.5 liters
- drumsticks - 2 pcs.
- potatoes - 3-4 pcs.
- garlic - 2-3 cloves.
- carrot - 1 pc.
- bay leaf - 2 pcs.
- spider web pasta - 2 tbsp.
- turmeric - to taste
- black peppercorns and allspice
- herbs - to taste
Method of preparation:
1. Cook the drumsticks, garlic, bay leaves and pepper from the boil for 20-30 minutes, you can cook longer, the broth will be more saturated. After cooking, remove everything from the broth.
2. Peel and dice the potatoes, dice the carrots, add to the broth and cook for 10 minutes.
3. Then salt the soup, add herbs, cobwebs, chopped meat from the drumsticks, a pinch of turmeric and cook for another 1-2 minutes. Be sure to let the soup brew for 30 minutes after cooking.
Useful tips from the cook:
1. To avoid catching the pepper from the soup, place it in a tea bag and then take it out, you can also put bay leaves and garlic in the same bag.
2. To make the soup transparent, remove the foam during cooking.
3. The dish is prepared without frying, so to make the color brighter, add a pinch of turmeric at the end.
4. Greens should be added to the soup, they will give the dish a rich flavor.
