Pancake cake recipe: no baking required
You can turn ordinary thin pancakes into a cake. For this, you will need a delicate cream based on cream cheese and sour cream. Besides, it's the week of Shrovetide, so you'll definitely have a recipe for such a dessert.

How to make coconut pancakes:
1. Add sweetener, salt (1 tsp) and olive oil (3 tbsp) to eggs (4 pcs).
2. Mix well.
3. Add 500 ml of milk (coconut or regular).
4. Beat with a mixer (if you don't have one, you can do it with a whisk).
5. Add sifted flour (240 g).
6. Beat with a mixer.
7. Add boiling water (300 ml) and beat with a mixer again.
Ingredients for the cream:
- 15% sour cream or thick yogurt - 200 g
- cream cheese - 175 g
- sweetener - to taste
- coconut flakes - 30 g and for sprinkling
- white chocolate without sugar - 50 g
How to make the cream:
1. For the cream, beat sour cream, cream cheese, sweetener and coconut with a mixer.
2. You can add a little condensed milk.
3. Assemble the cake by spreading the cream on each pancake.
4. Melt chocolate in the microwave (add a little coconut oil).
5. Pour chocolate over the last pancake, sprinkle with coconut and refrigerate for several hours.
