Shish kebabs can be made from a wide variety of meats, including fish and pita bread. To make the meat juicy and tender, it needs to be properly marinated, with salt, spices, onions, lemon or vinegar, and wine.
The chef shared on Instagram useful tips on how to marinate different meats for barbecue.
– To make the barbecue really tasty, it's important that the meat is chilled, not frozen!
– Fresh and young meat can be simply seasoned with salt and pepper. But if you want to give the meat a rich flavor and unusual taste, use a marinade.
– Chicken can be marinated for only 30 minutes, while pork, beef, and lamb can be marinated for about 2 hours.
– The minimum marinating time for chicken is 2 hours, for pork – 4 hours, for beef and lamb – 6 hours.
– Marinate older meat or meat whose quality you are unsure of longer. This will soften the fibers and make the kebab juicier. Use ingredients with antibacterial properties, such as onions, in the marinade.
