Rice is one of the healthiest and tastiest cereals that can be used to make many delicious dishes, from risotto to salads, meatballs, stuffed cabbage rolls and salads.
Chef Yevhen Klopotenko shared a recipe for an original recipe for a delicious rice salad with spinach and tomatoes on his website.
Ingredients:
- rice - 150 g
- water - 300 ml
- tomatoes - 1 pc.
- green onions - 8 pcs.
- spinach - 100 g
- coriander seeds - 1 tsp.
- olive oil - 4 tbsp.
- ground pepper - to taste
- salt - to taste
Method of preparation:
1. Boil rice with salt. Bring to a boil and cook for another 5 minutes. Remove from heat and leave for 15 minutes under the lid.
2. Cut tomato into small cubes, chop onion and wash spinach.
3. Put the rice in a bowl, add the vegetables and spinach.
4. For the dressing, pour in olive oil, add coriander seeds, ground black pepper and salt. Mix, pour over the dish and serve immediately.
