Hot salad with liver, eggs and vegetables for a hearty lunch: an original recipe

If you like liver, you should know that it can be used to make not only pancakes, cake or chops but also flavorful and healthy hot salads. Liver goes well with all kinds of foods and herbs.
Cook Victoria (cook_with_me_at_home) shared a recipe for a delicious hot liver and vegetable salad on Instagram.
Ingredients:
- chicken liver - 500 g
- onion - 150 g
- carrots - 300 g
- eggs - 3 pcs.
- salt, pepper - to taste
- oil - for frying
- mayonnaise - 80-100 g
- grain mustard - 25 g
Method of preparation:
1. Cut peeled onion into thin half rings. Grate carrots and fry until golden brown.
2. Beat eggs with a pinch of salt and fry two pancakes in a pan greased with vegetable oil.
3. Cut the pancakes into thin strips.
4. Wash liver, remove the excess fat, roll in flour and fry in preheated vegetable oil over medium heat until golden brown, about 3-4 minutes on each side. Put on a paper towel to remove excess oil. Then cut and season with salt.
5. Assemble the salad: put all the ingredients in a bowl, add mayonnaise and spice dressing, mix and season with spices.
