Homemade safe marshmallows for children: how to cook

The simplest and most budget-friendly dessert is marshmallows. It comes in completely different flavors and even in chocolate. But it is best to try to make it yourself at home, from natural products, without thickeners and dyes. Even children can eat such marshmallows.
Cook Valeriia shared a recipe for lemon marshmallows on Instagram, which is prepared very quickly and you will be sure of its safety.
Ingredients:
For the syrup:
- lemon puree – 75 g (2 lemons)
- sugar – 140 g
- water – 50 ml
- agar-agar – 10 g
- yellow dye (optional)⠀ ⠀
For the meringue:
- egg white – 35 g
- sugar – 35 g
- lemon juice – a pinch
For the sprinkles:
- corn starch – 5 g
- powdered sugar – 10 g
Method of preparation:
1. Cut the lemons in half and into 4 pieces. Remove the peel and blend in a blender, put in a saucepan, and boil until slightly thickened.
2. Add sugar, water, agar-agar, coloring and stir. Put it back on medium heat and stirring, bring to a boil. Reduce the heat slightly and keep stirring for another 4-5 minutes.
3. Beat the egg whites with the sugar, add the citric acid, and beat at medium speed until foamy. Gradually add sugar and beat until peaks form. Continue whisking, pour in the hot syrup, and beat at maximum mixer power for a few minutes until thick and stiff.
4. Put the mixture in a piping bag with a nozzle and drop the marshmallow halves onto parchment. Leave at room temperature for a few hours, preferably overnight. ⠀ ⠀
5. Assemble the marshmallow halves, and sprinkle with a mixture of powdered sugar and cornstarch.
Store the finished marshmallows in a sealed container for up to 2 weeks.
