Cook Polina shared on Instagram a recipe for a delicious, flavorful lemon cupcake with icing, which you can prepare very quickly and easily.
Ingredients:
- flour - 230 g
- sugar - 200 g
- baking powder - 2 tsp.
- salt - 1/2 tsp.
- eggs - 3 pcs.
- sour cream - 250 ml
- butter - 125 g
- lemon zest
- lemon juice from one half
the glaze:
- powdered sugar - 150 g
- lemon juice from the other half
Method of preparation:
1. Combine flour, baking powder, salt, sugar and mix well.
2. Crack the eggs into a separate bowl, add 100 g of sugar and sour cream, and mix all the ingredients until smooth.
3. Grate the lemon zest (only the top layer) and squeeze out the juice, add the melted butter, zest, lemon juice and mix.
4. Add the dry ingredients and mix well.
5. Cover the mold with parchment, grease with butter and pour the dough, smooth it well on top, bake for 40-50 minutes at 180 C.
6. For the icing: mix the powdered sugar with the lemon juice.
7. Remove the cake from the mold and let it cool, then pour the icing over it.
