Ingredients:

Sponge cake:

  • flour - 75 g
  • milk - 45 g
  • butter - 35 g
  • vanilla extract - 1 tsp.
  • yolks - 4 pcs.
  • egg whites - 4 pcs.
  • sugar - 95 g
  • baking powder - 1/3 tsp.

Chocolate ganache:

  • chocolate - 130 g
  • cream - 130 g

Butter custard:

  • milk - 180 g
  • egg yolks - 3 pcs.
  • sugar - 40 g
  • corn starch - 20 g
  • vanilla extract - 1 tsp.
  • butter - 150 g

Syrup for impregnation:

  • sugar - 70 g
  • hot water - 100 g
  • vanilla extract - 1 tsp.

Method of preparation:

1. Chocolate ganache: put the chocolate in a bowl and pour hot (boiling water) cream (130 g). Wait 2-3 minutes, stir until smooth and cover with cling film, refrigerate for 1 hour.

2. Cream: heat the milk, mix the egg yolks (3 pieces), sugar (40 g), cornstarch (20 g) and vanilla extract (1 tsp). While stirring the milk, slowly add the mixture, cook for 2-3 minutes over low heat, continuing to stir. Strain through a sieve, cover with cling film and refrigerate.

3. Sponge cake: whip the whites until peaks. Whisk the yolks and sugar separately, add the whites, flour, baking powder, milk and melted butter, mix, pour into a mold and bake for 15 minutes at 170 C. Be sure to let the sponge cake cool after baking and cut into equal pieces.

4. Soak: mix sugar, vanilla extract and hot water.

5. Assemble the cake: spread the ganache (2/3) evenly over the sponge cake. Put the cream on the ganache and smooth it out. You can make cones of nuts and leftover sponge cake on top. Put the finished cake in the refrigerator for 30-40 minutes. Then whip the remaining chocolate ganache and brush the sides of the cake. Make a tree bark pattern and refrigerate.
