Baked potatoes with bacon under a cheese crust: crispy and delicious

Ingredients:

- 4 medium potatoes

- 80 g of bacon

- 50 g salted cheese (cheddar or feta)

- 1 tbsp of sour cream

- green onion

- 30-40 g of cheese for the crust

- salt, pepper, dry garlic

- oil for frying the potatoes

1. Wash the potatoes well and pierce them with a fork in several places (this is necessary to allow steam to escape and prevent them from cracking during baking).

2. Put them in a baking dish with parchment, brush with vegetable oil, and sprinkle with salt and pepper. Put in a preheated oven for 50-60 minutes at 200 degrees.

4. Meanwhile, fry the bacon in a dry frying pan until golden brown.

5. When the potatoes are ready, they should fall off the knife easily when pierced. Take them out of the oven, cool them down a bit, and make boat-shaped cuts on each potato, using a teaspoon to carefully remove the center as much as possible.

6. Put the potato flesh on a plate, mash it with a fork and add sour cream, salted cheese, green onions, fried bacon (you can add a couple of spoons of fat from the bacon frying for a more pronounced taste), salt, pepper and dry garlic to taste. In general, you can get creative with the filling and add whatever you like best

7. Stir and fill the potatoes with the prepared filling. Sprinkle with grated cheese and put in the oven for 10-15 minutes until golden brown.
