The best base for a delicious cake and pastries is sponge cake. However, very often it is not so fluffy and tall due to non-compliance with the proportions. Culinary experts recommend adding 4 eggs to the base, which is exactly how many are needed for the perfect structure.

Tip: eggs for the batter should be at room temperature and of category C0.
Ingredients:
- eggs - 4 pcs.
- sugar - 155 g
- vanilla sugar - 1 pack or vanilla extract - 3 drops
- flour - 155 g
- potato starch - 25 g
- baking powder - 7 g
- sunflower oil - 40 ml
- boiling water - 50 ml
- salt - a pinch
Method of preparation:
1. Preheat the oven to 165 °C.
2. Beat eggs, sugar, salt and vanilla extract with a mixer at the maximum speed. It is important to beat the eggs for about 10-15 minutes. The mass should become white and increase in volume several times.
3. Sift flour with baking powder and starch in a separate bowl and mix with a whisk until smooth.
4. Add half of the dry ingredients to the beaten eggs and mix gently. Add boiling water and butter, mix until smooth and add the remaining dry ingredients. Mix gently again to combine the flour with the eggs.
5. Pour the finished batter into the prepared mold and bake for 40 minutes. Do not open the oven for the first 20 minutes. At the 40th minute, you can check the readiness of the sponge cake with a toothpick: if it is dry, reduce the temperature to 120 °C and bake for another 10 minutes.
6. Turn the sponge cake upside down on a wire rack, remove the foil, and leave it to cool completely. Then wrap the sponge cake in cling film and refrigerate overnight.
